Warm & Zesty Chicken Tortilla Soup is basically a hug in a bowl—if that hug came with a little spicy kick. Loaded with tender shredded chicken, juicy tomatoes, and a zesty broth that sings with bold spices, this soup doesn’t just warm you up; it wakes up your taste buds! Crunchy tortilla strips? Check. A squeeze of fresh lime? Absolutely. A sprinkle of cheese and a dollop of sour cream? Now we’re talking. Whether you’re fighting off a chill or just craving something downright delicious, this flavor-packed classic is always the right answer.
Ingredients:
1 Diced Onion
2-4 Cloves of Minced Garlic
64 Oz Chicken Stock
1-2 t Ground Cumin
1 t Chili Powder
1 15oz Can of Black Beans – Drained
1 15.25 oz Can of Corn – Drained
1 14.5 oz Diced (or Petite Diced) Tomatoes – NOT Drained
3-4 Cooked Chicken Breast
1 Bag of tortilla chips
Directions:
Cut chicken into 1 in (or smaller) cubes. Or you can cook the chicken in a pressure cooker and then cube it, doesn’t matter. Brown and cook through the chicken in a sauté pan, set to the side for later. Cook the onions in oil until translucent, then add the garlic and cook for a couple of minutes then add the rest of the ingredients including the chicken, bring to boil and simmer for 10-20 minutes. We like to serve it with grated cheese and tortilla chips on top, I also like to add fresh cilantro to my chicken tortilla soup. Bon Appetit!!
